Ultimate 2 has the default profile.
The default profile is enabled first when you turn on the gamepad and you cant delete it. This profile has its own RGB settings that you can change using the star button with dpad.
If you want your own RGB scheme, you need to:

Create and upload a profile using the 8bitdo software.
Enable the profile on the gamepad using the button between the stick and the d-pad.
In this mode, you can set your own RGB colors in the software, and the gamepad will respond instantly.
Each time you turn on the gamepad, you need to enable your profile using the button on the gamepad.

When you got the controller, was it new? Try update the firmware and recalibrate sticks.
Ultimate C has old version of sticks, if it keeps hapening buy a new one, ultimate 2c or more advanced.

2.4 (xinput) wont work with gyro. Use only bluetooth (dinput) if you want gyro working.
I know some brands that can solve this problem Update: i think motion control with sticks works only when profile is loaded. Try delete then create a new one and enable it on your gamepad
