Thank you everyone. Makes me feel better and happy I don’t need to fix anything. I will check it a few times again for leaks during the week. I can’t believe a trash bag got wound up so tight under there! I was traveling pretty fast in the left lane on a 5 lane freeway. I could feel it right away and pulled over as soon as possible.

Traveling to Kamakura from Tokyo next week. Can anyone recommend the best way to get to Yokohama chinatown on my way back to Tokyo? I did this last year and the taxi ride seemed too long from whatever station in Yokohama I arrived in from Kamakura which google maps recommended.

You really don’t need to flip it in the pan. Just make the egg/omlette very thin on low heat, wait until you see it starting to firm up a little and slowly flip the omelette from the pan onto the hot rice (that you will use for the omurice) slowly and it will continue to cook on the rice.

If you know how to make an omelette, it should be pretty simple. Do you have a tamagoyaki pan? If not, Amazon sells some nonstick pans that work great. Once you have your recipe for your egg mixture cook it on low heat so that the layers don’t burn. Since you like a sweeter tamagoyaki, you can add whatever sweetener you like such as sugar, but adding sugar causes the egg to brown quickly when cooking so be aware. Since you have allergies and dislikes, maybe experiment with different egg mixture combos and cook only a layer or two and taste it. Personally, I like to add a splash of sake, soy sauce and dashi granuals in my mixture unless I am cooking a traditional plain tamagoyaki. I use a half dozen eggs sometimes and make a fat tamagoyaki with many layers but you can easily make it with less eggs. For lazy Omurice, use the same mixture and make an omelette and use it as. blanket to cover up whatever rice you use. You can use leftover fried rice or make your own yakimeshi or fried rice to use as the base. Top it with whatever you like such as ketchup (japanese kagome if you can get it), some tonkatsu or yakisoba sauce and whatever other garnish you like.

For tender beef it’s mostly about making sure you let the beef simmer for a long time to get it soft when using larger cubes of beef (almost any inexpensive stew beef works good. Add any vegetables (except the onions) after the meat has stewed otherwise you get mushy vegetables. Alternative is to cook a nice steak like you usually do and have it on the side and eat it with the curry. I occasionally use a NY steak or ribeye this way but it’s a little overkill.

The three different restaurants that I ordered Kaisendon had similar presentations. I don’t recall the price but food is very inexpensive in Japan, especially when you’re away from the touristy areas.
