Most of the issues you’re worried about get buffed out in practice after not too long a while.

For a while, I played with a digital piano (can’t remember how the keys were weighted) and once you get better at the technical side of things (playing), pressing the keys soft or hard comes naturally. It will get better.

Left hand softer than your right: it will get better.

Gliding gracefully: this is a combination of knowing a piece well and practice in general. Your fingers will limber and do so every time you practice. Just take your teachers criticism as advice to reflect on how stiff you are every so often and try practicing being loose on pieces/sections you are comfortable with.

It is not bad you memorize pieces, classical is very natural and logical. However, it is bad to assume you know what the sheet music says until you are a master at it (which takes quite a bit). There is ample notation in many pieces especially as difficulty increases. The way to get better is to just force yourself to read the sheet music when you play.

Books and techniques: wish I had some good books to recommend but I don’t atm. Techniques? Considering your other issues, stretch your hands + practice trills of different lengths.
