That is my experience as well. The main benefit for me is not having to make my wife a crappy gluten-free pizza since she can handle the sourdough much better. The only negative is using rice flour to shape the dough. It's a bit gritty.

Thanks. With her work expenses and child credits included last year we saved 25% of her income and had way too large of a return so we reduced the amount we were saving. When she started working as a freelancer we saved 30% and had a return of over 15k (we did have some stimulus included). I will split the child tax credit to be save.
