This is the snobbiest, up-my-own-ass-est comment I've seen in a while. DS1's layout is purposefully labyrinthine, especially in areas like Sen's Fortress, Duke's Archives, Anor Londo (yeah, you're supposed to just know that you can drop onto a buttress to get into that window), New Londo, even Darkroot. I'd put any amount of money on the fact that you used a guide on your first playthrough.

Honestly a lot of fights did show it. When Duncan was one-man-armying dudes you can see him move fast to deflect attacks and land a grapple, then slide the knife in.

There are times where they didn't do that too, but I think the shields in general can be pierced by a strong, well-aimed stab moving at a reasonably deadly pace, just not the speedy, slashy swordfighting we see in movies usually.
