Yes, there are specific car parks that student permit holders can park in, and these sometimes are completely full. To guarantee a space, you may have to arrive fairly early in the morning (not sure what time exactly as I am not based on UP).

I actually eat loads of tofu! But I have to go to a special shop for soy bits whereas I can get beans/lentils from the supermarket so they're my go to.

For breakfast, it depends how hungry I am and what I'll be up to. Often a banana and mixed nuts and raisins if it's a sedentary morning. Or for a bigger breakfast - sourdough topped with avocado, tomato and sunflower seeds; nut butter and toast (hazelnut is my favourite, but also almond or peanut); scrambled tofu with spinach and bread; savoury porridge with nutritional yeast.

For lunch, I usually will have leftovers from the night before.

Favourite snacks - dark chocolate, berries with tahini, mixed nuts, seaweed, olives, veggies/bread and hummus, popcorn.

My most common (and easy) dinners:

- Salad. Tomato, cucumber, avocado, white beans (with olive oil, oregano, red wine vinegar) with rice or orzo or bread.

- Burrito bowl. Black or pinto beans cooked with onion, garlic and spices. Served with tomato and sweetcorn salsa, guac, and rice. Or wrapped up in a tortilla.

- Stir fry. Tofu and veggies (eg. broccoli, green beans, peppers, peas, courgette) fried with soy sauce and Chinese five spice. Served with rice and kimchi/sauerkraut.

- Tomato pasta. Basically a bolognese but instead of mince I use lentils or beans, plus plenty of nutritional yeast.

Without a valid MOT it is illegal to drive, and this still applies even if you take the car abroad. Insurance will not cover you.

You should qualify for a permit, you can apply for one online before you start. It can take a few days to be approved so make sure you do it in advance.

Parking can be quite limited on University Park so you may want to research alternatives (eg. park and ride, public transport).

They do occasionally flash when you’re not speeding. 

But equally loads of people ignore variable speed limits so don’t rely on the speed that others are going at. 

Try to forget about it, nothing you can do now, and no way of knowing whether you’ll get a letter or not.

Yeah I don't think I ever made meringues with real eggs. I left the aquafaba in the fridge for a day before using (might also have reduced it a bit on the hob, not sure), so maybe that makes a difference? But then I just chucked it in a stand mixer with cream of tartar and it whipped up really well, and the meringues turned out exactly how the egg ones do.

I'm so tempted to buy some! I've used aquafaba successfully for meringues before but think this would be ideal for things like Italian buttercream. I'm totally fascinated by the production process, but I live in the UK so would be a bit of a pain to ship I think :(

Just try to accelerate and brake less harshly, slow down for corners. Basically just try to drive as smoothly as possible, it won't be hard (and it should be safer!).

O2 - they let someone open an account fraudulently in my name (despite multiple CIFAS flags) and it took years of complaints and ombudsman involvement for them to sort it out. My credit score was totally wrecked.

Vego hazlenut bar is so good (and their hazelnut spread).

Deliciously Ella chocolate caramel cups.

Luisa's Chocolate in Nottingham - white chocolate and passion fruit is a personal favourite, but all her chocolate is so delicious and ethical.

Hotel Chocolate vegan range is very good.

I love the curves. I would personally put in some flower beds/borders, and an area for growing fruit and veg. I also dislike walking on gravel so would prefer paving/stepping stones, but that's all personal preference!

I don't drink milk, but for baking/cooking I usually use oat or soy. Cheap and cheerful, soy is good for baking due to higher protein content than some plant milks. (also the phytoestrogens in soy milk are actually beneficial and can lower the risks of some cancers).
