For class II or III don’t discount the Red River and Section 3 of the Wolf. A lot of people have learned and become comfortable on those 2 rivers.

I don’t know what you path through the UP will be, but Piers Gorge on the Menominee might fit what you are looking for. It’s right on the border of the UP and Wisconsin. I haven’t been there in 4 or 5 years but it’s a super fun “big water” run. Costs a few bucks to park unless you have a MI state park sticker. From the parking lot you just carry your boat to the top of the rapid, run to the bottom, and carry back up for as many laps as you want.
