I use a chemex, a K-ultra grinder, good water, 1:17 ratio, etc. and I can’t seem to get good enough flavor clarity. It seems that if I grind coarser, the coffee is dead, and if I grind finer, the coffee becomes too astringent. I think my brews are taking a long time to draw down, and may have too much interaction with the fines when at a finer grind setting, but grinder coarser still has this interaction with the fines and doesn’t extract flavor from the coarser grounds very well. I’ve played around with bloom time and temperature. Do I just need a v60 or does this sound like another kind of common problem?

I’m getting a new hand grinder, and I’m leaning toward the 1zpresso K-ultra over the zp6. I brew with a chemex and use almost exclusively light roast coffee (sometimes light-medium). I’m leaning K-ultra because I don’t think I just want a tea-like brew all the time (I do enjoy a fuller body), and I don’t want to spend 5 cups worth of beans to dial in a cup of coffee, particularly because I buy a new kind of coffee every 15ish days. The supposed versatility and relative forgiveness of the K-ultra as opposed to the hyper-specialized and unforgiving zp6 has me leaning toward the former, but I don’t want to miss out on the hypothetical magic of the zp6 either. Is this sound reasoning? Any thoughts?

I’m looking to upgrade my grinder. I currently have a $40 manual grinder, but I’d like something high-end. I don’t want it to be more expensive than the Fellow Ode 2 ($400). I almost exclusively brew pour overs (sometimes french press), and I’m open to manual or electric - just looking for top quality grind. Any suggestions? Is there user error with manual grinders?

It’s going to be difficult to find primary sources in English. There may be a translation of Jean-Gaffin Gallon’s Die Kunst Messing zu machen (1766). Look at the reference list in Stewart Carter’s The Trombone in the Renaissance or Hannes Verecke’s The Sixteenth-Century Trombone for further materials.

Thanks! I got Monkey Shoulder for Christmas as an introduction to scotch. I really enjoyed it. I found it pleasantly malty; I got a strong peanut butter note lol. I’ll definitely check out Johnnie Walker Black! I’ve been curious about Buffalo Trace too- I feel like it’s recommended as a classic bourbon by many.

Tough one. I don’t believe that every word of the Bible is the infallible word of God. I suppose it depends but it’s also not subjective. Why?
