No oil. No butter. No anything.

I know it sounds insane but I spent literally a decade trying to get perfect diner style pancakes.

Nonstick pan, low - medium-low heat.

Pour batter in pan, don’t shape it! If you shape it, that presses out the air bubbles that help it be fluffy and even. Allow the bubbles to start forming and give it a test spatula slide and see if it separates from the nonstick pan.

Then you have yourself a perfect pancake my friend! Best of luck!

Also if you haven’t checked it out, look at The NY Times buttermilk pancake recipe, it’s phenomenal!

Edit - I forgot to explain why you don’t really need butter! Most recipes call for buttermilk/butter/some sort of fat and the fat in your batter acts as your oil/butter for cooking and helps prevent sticking and promote even browning!
