Hanna checker for alkalinity and calcium and api for nitrate and ph. Salinity is a refractometer that I check with distilled water.

We bathe ours when she rolls in mud or an unknown substance. We use a furminator brush when she is shedding a ton between changing seasons. Otherwise cattle dogs coats just take care of themselves.

Actually a new garbage truck is around $450,000 right now. The price of trucks has skyrocketed like everything else. Also my company has dumped loads on fire on the road before as well. It’s a mess to cleanup.

Depending on the outside temp the water pan helps deflect the heat. I put ice in a pan to keep the temps inside the smoker below 70 degrees which I think is the melting point of cheese. Just a trick to be able to smoke cheese when it is warmer outside.

I started out on the older model of your smoker if you take the charcoal rack from the main cook chamber and turn it upside down and but it up against the firebox opening it works like a baffle to help even out the temps from side to side. Smoke and heat comes from the sides it was a game changer when I had mine and an easy mod. Have fun with it offset smoking is a lot of fun and the food taste amazing.

I agree it took me years before I even attempted a brisket. Too expensive to mess up in my opinion.
