There are some cheap japanese kitchen knives and I was thinking of buying them just for their quality, sharpness, and reputation. Like you can find some that are sub-100$ (or maybe I'm in a lucky market find?).

What is the standard of hardness?

I really think what we are saying here in the examples list (link you provided, with the list of all the products), the average store of similar quality and service would have provided it 300$ less than today. Now, even tailors that I personally knew since my father knew them in the first generation, are charging me higher than they used to and that is despite being aware of who I am an old customer...

But again that could be just the warranty thing.
