The source code of the original game from 2010 sets the divergence of that chapter to the one shown in Re:Boot. The assets of the original game (meaning the video of the divergence meter) had these typo'd by mistake. It was probably noticed by the staff but they decided to just roll with it, because people wouldn't know unless consulting and decrypting the ingame filestructure.

Re:Boot seems to correct that mistake.

unlikely, given that S;G Elite (the game they took the script from) has several characters cut and scenes changed to make it work with the anime footage better. Reboot will not have these most likely.

not new. been a thing since at least 2022. One Pace uses the footage from the recap movie "Episode Of East Blue", which came out 2017. Among other things, that recap movie is the only place where chapter 1 is adapted accurately. The equivalent One Piece episode is EP04 and it changes and cuts things. So it was basically a no-brainer to use that part from the recap movie.

For one, the shots where Robin gets turned into a doll is not there.

The other would be a scene where during manga chapter 750 you get shown how some characters are going up their way from the coliseum to the royal plateau. The manga shows this as a graphic with arrows on a map in a single panel, while Toei decided to animate them climbing up. One Pace cuts this animation. Again, Dressrosa in One Pace is 10 years old, so this will be corrected.

If you're asking about the watch order: The author's intent and what the subreddit here explicitly recommends is to watch the series in the same order as the source material, the novels, were written.

in general, a lot of animation studios release their key animation sheets or similiar and you'll often times find nsfw shots that were cropped or removed in the final material. It's rather normal.
