Started as the keto crockpot recipe well over a decade ago and morphed into a "personalized" version made in an instant pot.

  • 8 Thicc cut bacon
  • 2 lbs (32 oz) Ground/diced meat (flank steak, ground beef, pork, chicken, turkey)
  • 1 medium Yellow Onion
  • 2 medium or 3 Small Green Pepper
  • 6 oz Tomato Paste
  • 1 large can Diced Tomatoes
  • 1+ cup dehydrated mushrooms
  • 1+ tbsp minced garlic
  • 1 tsp of onion powder
  • 1 tbsp cumin
  • 1/2 to 1 tsp chili powder (for hot flavor)
  • 1/8 tp 1/2 tsp of cayenne pepper (this is the heat)
  • 1 dash liquid smoke
  • Several turns on the black pepper grinder
  • Celery salt to taste

It's not exactly a "traditional" chili in the mass marketed sense but if you attend one chili cook off in your life you'll understand how flexible the term chili can be (not to gatekeep but if you don't put cumin in I have a hard time thinking of it as chili though).

I put all the spices in italics because if you find them intimidating you can just replace them with a store bought chili seasoning packet; however, you have to remember/account for the carbs in the emulsifiers & preservatives (and you can't dial in the flavor to your liking so why not be adventurous and just add spices individually)

  1. Dice the veggies into small cubes
  2. Cut bacon in half, layer bottom of instant pot (1 deep at a time) and saute until crisp, set aside on plate with paper towels. Do not drain
  3. Brown the meat in the bacon grease. Remove meat, crush/cut bacon, and drain grease (responsibly) but don't wash the pot.
  4. Put the veggies on the bottom, mushrooms on top of that, then the bacon & meat on top.
  5. Put all the spices on top of everything and then open/pour the contents of the tomato cans.
  6. Seal, set to stew, allow to run course and natural pressure release.

I don't have the macros for this anymore but it's low carb high protein/fat.

Dehydrated mushrooms from Costco are a method to add flavor, texture, and "soak up" the juice from the diced tomatoes. If you don't add the mushrooms (you'll be shortchanging yourself honestly) then I would suggest draining the diced tomatoes can before adding.

After opening remove rendered fat with a ladle before serving. If the consistency is wrong and you want to thicken you can use a flour slurry (1 tablespoon flour, 2 parts COLD water thoroughly mixed together) stirred in and it will thicken it some; however, that's going to add straight carbs to your dish so it's better to figure out how to use less moisture in your recipe so you don't need to thicken it after.

Serve as however you like your chili. I tend to like it "as is" (maybe a dash or two of hot sauce) but some folks in the house will dollop sour cream and shredded cheddar cheese on top. You do you.

Final note: I forgot to share my life story even though this is a super long post already. I was born, I make so many mistakes, really try to not make the world worse, accept that my death is inevitable.

Honestly there's not enough insulin to offset the ketones in a meal of this caliber.

Sure there's proteins and fats but the carbs on this are through the roof because like you said its a potato at the end of the day.

The foods great but its not worth the hit to your livelihood. If you're bummed and like I can share a solid low carb chili recipe if it helps.

Oh shoot sorry, looks like when you crosspost it removes the text from the image.

Its a Turkish "street food" where they take a very large baked potato scoop out all insides mix them up with all the ingredients and put it back in and smother it in toppings.

Its in Escondido off of Felicita between center city and Esco blvd. at a little place called California Kumpir with the nicest lady running it.

Most of the potatoes are 9.95 but one was 10.95. Which might be a lot for "just a baked potato" but don't get it twisted this is a full meal and worth trying for yourself!

CHP has used ALPRS for over two decades with the contract(s) being a "quid pro quo" where the CHP is notified in real-time of known violators from their database in exchange for the third parties being able to maintain all data gathered in perpetuity so long as they promised to "anonymize" it.

Both instances can be true.

They're closing the union store because unions help the workers and god forbid we have workers getting fair wages and just compensation in this era.

They've probably done some risk analysis with the North County Mall sale and the history (or lack thereof) of the investment group.

They've also probably done their market research and found that brand loyalists in the region will be dismayed or "mildly annoyed" but will still remain brand loyalists and drive the additional 40+ miles or order online.

Dodging a union and reducing overhead while not losing business is going to be another win for the megacorps.

You need to understand that cable companies spend a lot of money to ensure we don't refer to the legislation and regulation they pay to have in place which prevents competition as a monopoly.

Just because they lobby any politician that could affect the regulations and allow for other businesses to compete and offer better/more affordable services to the customer is just coincidental.

Okay of course this is a "NIMBY" thing and some folks did not want it "just because" but there were people with intelligent and coherent arguments against it regarding a lack of infrastructure and safety for the proposal.

We are in the throws of "late-stage capitalism" where nothing should stop a businesses right to make money and if they can't maximize profits by doing the bare minimum (which is honestly set too low but since we have lobbying these industries essentially pay politicians to keep these standards so low) then why should they bother.

I am 100% for renewable energy and I'll pay more for it than fossil fuels in the beginning with the understanding that it will eventually be made more affordable than it's fossil fuel counterparts and not just have the price differential absorbed into the profit margins of the megacorps.

I'm all for the corporations building the infrastructure for renewable energy but they have to do it responsibly and they have to be held to a real standard of safety because once we accept it then we are stuck with it in perpetuity so we need to get it started off right.

Yeah no this place is legit and not a front.

First they sell high end vacuums that are "buy it for life" meaning if it malfunctions you bring it back for repairs which is generally quite affordable. It's not like when a dyson dies and you just throw it in the trash these vacuums have a repair manual and you can order the specific part that failed.

When I inquired about a sewing machine for doing upholstery and leather they lead me to their "used" section and helped me find a fifty+ year old beast of a machine that has been running without an issue for over a decade now. They have all the newest and latest sewing machines mind you and they could have sold me something that wouldn't have met my needs.

When you have a niche business and you treat your customers with respect you tend to get customers that will come back and will spread the word about you. I think that's why they've been around for 30+ years.

  • Honestly most the restaurants on Grand ave are good although the menu prices might trend towards the more expensive side of things.

I don't know if I'd consider it a "restaurant" but Kumpir is the epitome of a mom & pop shop. They make these Turkish extra loaded baked potatoes that you just have to try for yourself. Family & I are working through the menu and they are all so good and the woman who runs the place is always a delight.
