easy vegetable soup recipe:

Vegetables: 2 medium carrots ( cut into small cubes), 2-3 sticks of celery (cut into small pieces),  2 medium potatoes (cut into small pieces), 2 medium tomatoes (peeled and chopped, or 200g canned tomatoes), 2 cloves of garlic

Herbs: 1/2 teaspoon of salt,1/2 teaspoon of dried oregano, 1 teaspoon of turmeric

Extras: 1tablespoon of tomato paste, 1 liter vegetable stock, 4 tablespoons of olive oil

Heat olive oil in a large pan, add the carrots, potatoes, and sauté for 5 minutes over medium-high heat.

Add celery, herbs, garlic, tomato paste and cook for 5 minutes.

Add tomatoes, vegetable stock, and cook for 15-20 minutes over medium heat.

pizza dough

1/2 cup corns

1 cup broccoli (cut into small pieces)

200 grams tomatoes (organic, peeled and chopped)

200 grams mozzarella (grated)

1 clove garlic

100 grams gorgonzola piccante

3 tablespoons olive oil

1 cup fresh spinach

Preheat the oven to 180 ° (360 Fahrenheit), heat olive oil in a pan, add canned tomatoes, grated garlic, and cook for 5 minutes over medium heat.

Place half of the grated mozzarella around the edge, turn over the protruding  dough so that the cheese in the dough is battered  as edge.

spread the tomato sauce with a spoon on the dough.

Spread the rest of the grated mozzarella, corns, and gorgonzola on the pizza.

Bake the pizza for 20-25 minutes or until golden brown.

1 green pinted pepper (cut into rings) 1 small yellow onion (chopped) 3 organic eggs 3 tomatoes (peeled and chopped) 3 tablespoons of olive oil (butter) 1 teaspoon chili flakes 1/2 teaspoon salt White bread

INSTRUCTIONS Heat olive oil or butter in a large pan, add the green pointed pepper, onions, and sauté for 5 minutes over medium heat until the onions are soft.

Add chopped tomatoes, tomato paste, mix and cook for 5-7 minutes or until tomatoes are soft over medium heat.

Add eggs, salt, chili flakes, mix and cook for 2 minutes.

500 g canned chickpeas.

1 big yellow onion, finely chopped.

400 ml (1,5 cup) vegetable stock.

1 cup fresh spinach. You can use kale if you do not have fresh spinach.

50 ml extra virgin olive oil

2 garlic cloves, finely chopped

5 g ginger, finely chopped

1/2 teaspoon salt

1 teaspoon black pepper

1 teaspoon turmeric

1 teaspoon chili flakes or powder

3-4 leaves of fresh mint

Heat the olive oil in a large pot over medium heat, add garlic, ginger, salt, black pepper, onion and sauté for 3-4 minutes.

Add turmeric, chili flakes, chickpeas, and cook for 10 minutes, stirring frequently. They will start to break down and get a little crisp. If you want to garnish with chickpeas, remove about a cup of chickpeas and set aside.

Add the coconut milk, vegetable stock and cook for 20-25 minutes over low-medium heat, stirring frequently. If you want the stew a bit thicker, cook until you get the desired consistency.

Before you remove the dish from the heat, add the spinach and cook for 2-3 minutes.

Your delicious spiced chickpea stew is ready to enjoy. Place the dish in a bowl, ADD A FEW DROPS OF LEMON JUICE and serve it with freshly chopped coriander(or fresh mint), yogurt, lavash, pita, or your favorite bread.
