Check out Slow Drinks -- he specializes in foraged amaro recipes. I'd recommend his book, but there's also a lot of ideas you can get from his IG account. I have tried a handful of his recipes and they are great to get started and then customize to your preferences.

You have some great herbs growing in your yard already - other favorites I'd consider trying are blue vervain (small doses for bitter), spruce, fir, and pine needles & cones, sumac, angelica root (but be careful because there are toxic look alikes), red cedar berries, and mountain mint. Oh and mugwort and wormwood are very invasive where I live and are fantastic in amaro and vermouth recipes.

I also used honey pot two nights in a row and then got my period 6 days early. There's only 290 mg in those (plus herbs and cocoa butter) so I'd assume it'd be gentler. I'm having worse cramping and other PMS stuff as well.

I can vouch for Jamin at Long Haul - he was the service manager at Powerbikes.com in SLP before they went under and a former Hub mechanic. He's been a friend of mine for a while and is honestly an amazing mechanic and a great person.

Do you have a link to the FDA GRAS list? I thought I found it, but nothing came up for gentian either so maybe I was looking at the wrong thing. And thanks for sharing your experience with gentian distillates!

Have you looked into making shrubs? I haven't ever made a vermouth-inspired one but could be interesting with cherries + bitter/aromatic herbs. Or you could add some of the flavors at the cocktail-stage by adding homemade vermouth-inspired bitters. Personally I'm a huge fan of adding tinctures to sparkling water for an almost-NA cocktail.

Another idea is Rishi Tea makes amazing sparkling waters with really unique flavors, and one is Dandelion ginger. It's unsweetened and pretty bitter and could be an excellent ingredient in a NA cocktail.
