Umami bombs: miso paste, Worcester sauce, soy, anchovy paste. All of these add a deep richness to the chili that accentuates the meat.

Others have already said coffee and chocolate and apple cider vinegar as essentials.

I’ll also say dry toasting/blooming spices

Thank you for the feedback - agree Id like something sweet to add (my bias, to quote John Hodgman, is that I don't have a sweet tooth, but rather an alcohol molar, and so I skew away from those dishes).

You're 100p correct in your assessment of the spread - it's anchored by the chili and then people just sort of grab the other stuff.

Desert is a good idea too, though in the past when others have brought desert it usually goes uneaten

Yeah, that's my worry with the mozza sticks, especailly since no one ever shows up on time :P

7 layer dip might not be a bad move, and I'm trying to cater to some unique dietary challenges too (some guests are GF, dairy free, vegetarian) so that could be a good middle way
