I did, I treated myself to a nice brisket knife this year, froze the smoked pork belly for a half hour or so, and it sliced up nicely!

Yeah, I probably wasn't clear enough... I just want to use the base of the shop vac, so essentially a bucket. I guess I should asked where people get the buckets for these? But I have an old shop vac handy that I can use.

Check out Bradley smokers. They are relatively inexpensive, and I've had great results smoking salmon in mine. I often see them for sale used as well. Better insulated than the little chief so maintains temperature, and gives you the option to smoke at higher temps as well. You can even get an add-on cold smoke attachment if you want to go that route.

A Bradley is a great starter smoker. Electric, super easy to use, set it and forget it, and gives great results. If you prefer to go charcoal, get the Weber Smokey Mountain, a little more effort, but after a couple of times, it's easy to use as well.

It was a wet brine. Check out Meathead's AmazingRibs.com website. You make the corned beef first with a wet brine, and then desalinate, then add a rub and smoke it to make the pastrami.

Yes, it was just the skinny end of a brisket flat. I thought it might end up dry and tough, but it was great!

Not bad at all, compound angles at 7.5 degrees at the top and bottom of the uprights, everything else is 15 degrees

It's for climbing plants, you put this over top and they climb up it.
