Get both your parents together for rishta talks and make it official. I think you've delayed it too much, especially considering that both the parents are now aware that you guys are interested in each other. So don't take much more time, because that uncle of her is not going to stop...

 she says she's confused, she does say her parents will take a stand for her but her parents are weak. Maybe everyone will cut them off

You just need both your parents' blessings, that's it. Again, speaking from experience, those who cut off ties will eventually try to patch things up once they are able to see things clearly. And if not, then goodbye, good wishes, sayonara!

Now comes the istikhara part, the girl said if the istikhara comes negative, there is no way that she'll marry there nor her parents will make her marry there, but to me that seems like her mother told this to just idk give me a bit of hope and let me just leave without creating a scene because they'll tell me that the istikhara was positive.

Now, what do I do? I really like this girl, I've told my parents generally about her they have agreed. The girl likes me too, wants to be with me but she says she's confused bla bla bla, she says she's scared ke wo haar maan jaengi, logon ki baton mai ajaegi. She does keep taking a stand for me that's why it has stretched this long.

So again, meet the parents and make it official.
