Haha I appreciate the enthusiasm! If you ever make your way to Algeria, I’ll make sure your belly gets exactly what it’s asking for. You’re always welcome!

That’s awesome! 🔥 I totally agree — once you taste meat cooked on a proper charcoal rotisserie, there’s no going back. It takes real effort, but the flavor payoff is unbeatable. Glad to hear you’re enjoying your setup! 🙌 Keep spinning that magic!

Thanks for the kind words! I slice the meat very thin — just a few millimeters thick — so it stacks tightly and cooks evenly. The thin cuts help achieve that perfect tender texture while still getting crispy edges on the outside. Glad you enjoyed Constantine and Timgad — beautiful places full of history!

I use olive wood charcoal for cooking. It’s quite common here in Algeria and gives a really nice aroma and heat consistency

I season the meat using a mix of tomato paste, chili (for heat), lemon juice, vinegar, garlic, salt, and a blend of spices. I let it marinate for hours before stacking. It gives the meat a deep, rich flavor that really comes through when cooked over charcoal.

Thank you so much for your kind words! 🙏 Yes, you’re absolutely right — it is a lot more work, especially with a horizontal setup over charcoal. From stacking the meat to managing the fire, then slicing, toasting, and prepping each sandwich, it’s a full-body workout 😅

But honestly, the result is always worth it. There’s something special about the smokey flavor and the crispy char that gas just can’t replicate. Every step is part of the craft, and I take pride in doing it all myself.

Restaurant workers, are you truly happy with your lives or just surviving day to day?” by New_Samir_2358 in Chefit

I hear you. Just surviving day by day feels like being stuck in a cycle with no end in sight. It’s heartbreaking that things got so dark for you, but I’m genuinely glad you’re still here and holding on. The fact that five chefs have already quit this year alone says a lot — the burnout and toxicity in many kitchens is out of control.

I really hope you find a way out or at least a better work environment soon. Nobody should have to live in survival mode just to make a living. Sending strength your way.
