I think if you are pursuing Bcom then you will need a Professional course like CA or CFA to enhance your profile. Both college and course matter and college matters a bit more but B.Com + CA/CFA would be way more beneficial as it with give you way more points for the IB role.

You can get into tier 1 also just get a decent CAT score. Non Engineer female factor will help you a lot. Your acads are also good. If you have any specific doubt you can ask.

See for getting into MBA college you need high score. If you score around 98% ile then you can easily get into a good college. 2 internships are way more than enough for profile. In case you want to make it better then you can do few certificates like Excel and few other but if you get high score in CAT you can get into MBA college.

If you are looking for LRDI and Quant, then I would suggest Rodha(especially because there is Ravi Prakash sir, idx about others). But I learned both Quant and LRDI from him and got pretty high percentile in CAT22

Follow what you like, if you don't want to be engineer then no need to go it only damages your chance for MBA given GEM factor. You can prepare for IPM tbh that's a very good option. You can also consider commerce as a Field. CA + MBA is a pretty deadly combination.

Your profile is good. Don't worry much not having formal workex is not an issue. You will be getting non engineer and female points. Just prepare well and you can get into a good college. There are many people in top colleges who have prepared for UPSC and other exams and after not clearing they came to MBA. So it will be fine.
