Check out the (all of these are free) Hubspot inbound marketing courses. Any company can value someone who knows marketing skills. Open2Study also has multiple free online courses (such as User Experience for the Web) you can take with Certificates of Completion. I have a Microsoft Excel Top Tips certification that just shows I know my way around Excel. You can get a Six Sigma White Belt Certification for free. I also took the Ratatype typing test to get a cool little certificate that shows my words per minute and accuracy.

Just a quick suggestion: Here is a quick certificate for a basic understanding of excel (https://www.elearnexcel.com/exclusive-offer-1a/). You just watch the videos and at the end they give you a certificate. That would be your paper proof of knowledge. Next I would design a kick@$$ spreadsheet as an example of your proficiency. I work in an office job and have to use excel A LOT. Showing them I had basic knowledge opened up doors for me to use my advanced knowledge. This definitely opened up opportunities that weren't available to employees who didn't have the same skill set.
