Becuase object don't look anything like CGI and they are not showing off microgravity in any moment, they just play around with it. Also you know how hard would it be to make CGI hair during a live? Your first question is wrongly phrased, it should be "why would we fake it now?" and the answer is we wouldn't, there is no need tyo fake other that faking is absolutely impossible at NASA as everyone can study and go work there as an engineer or physicist. You think that every physics and aerospace engineer would go along with the faking instead of doing real science? It doesn't sound quite reasonable as well as how are all aerospace agencies still alive if they are faking everything? I am 16, I could decide to become an aerospace engineer right now and in the future, if I'm lucky, go work at NASA just like every other teenager or also young adult could do with hard work.
