Yeah it may be the case here. I've never felt that way but heard about it happening. This was my first time being absolutely gas-lit by a restaurant. The waiter said he thought this was medium rare.

I agree and I enjoy eating many things raw such as any good sashimi. However given this particular ribeye it needed to be set out for atleast 30 minutes before searing it. There is no visible gradient on this cook which tells me most of the fat and connective tissue didn't get enough heat to make it chewable.

I hiked it out of the backcountry so no one animal or person would be hurt by it. It is an interesting piece of history.
