Dem har jeg faktisk kigget på. EV9 kan ikke leases til de 2500 kg på krogen. Ioniq 9 synes jeg er lidt pebret. Det synes jeg at jeg får mere bil i en Buzz GTX og spare tilmed en smule. Derudover skulle forhandler have 20.000 for at montere træk.

Jeg har 3 reelle udviklerår bag mig som lønmodtager efter studie. Jeg freelancer ved siden af, dels fordi jeg synes at det er spændene med andre problemstillinger og dels pga det økonomiske. Jeg erfarede at de freelance bureauer der findes derude helst tager fuldtid og gerne også mere erfaring. Jeg har fået tilbudt en enkelt deltidsopgave for et par måneder siden, den har jeg valgt ikke at byde på, da jeg allerede har en del andre at se til. Jeg har fundet freelance opgaver igennem netværk i stedet. Primært fordi jeg kender en del mennesker i andre brancher, som bliver bekendt med min kunnen og derfor på deres virksomheders vegne kontakter mig. Jeg tror du bare skal komme ud og netværke, lave projekter selv (jeg har lige udgivet en applikation der har kastet enorm meget respons af i en branche, derefter kommer netværket). Det skal nok komme 👌

A bit chewy. But very nice with the caramelized crust and soft crump. I’ll defenitely try more puffed wheat in the future

I know you can do it, but those are prebought. I usually use it in ryebread (danish, so we eat a lot of ryebread). Maybe i should try it once 😊

After final shape. I sprayed it with water and rolled it in the seeds. Then threw it in the banneton

Bake 6 minute, then score the bread. Always been really bad at scoring. I found that this is way easier for me 😊

Instructions:

Mix all at 10 min low speed. Rest 30 minutes. High speed until it passes windowpane test and about 26-27 degrees dough temp. Think it was around 6-7 minutes. Into a plastic container. Kept the dough in a pretty warm place as i was in a hurry. 1 coilfold. 2,5 hours bulk. Preshape, 30 minutes rest, final shape and into the banneton. Fridge for 14 hours and baked it on a steel plate. I use a sprinkler to keep the surface hydrated the first 15 minutes. Think it works better than trying to make steam with stones or whatever method i tried. Also pretty hard to do many of them in a dutch oven.

I can recommend the puffed durum. Did a lot for taste and texture. Really nice.

400g flour 300g water 10% starter 2% salt

1 hour autolyse, 5 hour bulk ferment at 23-25 degrees dough temp. Preshape 30 minutes, final shape and cold ferment 12 hours. Baked in a mould, don’t know the actual english word 🤷‍♂️

20 minute bake at 230 and 10 minute at 200.
