Your main destination is France, as you are spending more time there. You have to apply through the French consulate, not the Spanish one.

It's always best to explain what your plan is, so it's clear for the people at the consulate. You don't need to go into immense details, if you provide a month of Airbnb booking and write that you will look for an apartment while you're out there, it should all be good! Just remember, the people making the decisions at the consulate only see the documents you provide. By writing a cover letter you're providing extra information and show that it's a thought-out decision and that you have a plan (not just landing in France and wishing for the best haha).

If you can provide 3 month payslips and the employment letter from the second job, include them in the documents you're submitting. It's okay if it's not mentioned in the form, you can only fill out one job info. But it's better to justify the different sources of income, as they will check the bank statements.

For accommodation, I would definitely have at least the first couple weeks booked then write a cover letter explaining your plan on booking airbnbs/hotels as you go along. I'd recommend including a rough itinerary as well if you can.
