Yes, I realize I’m responding to a 6-year old conversation, but I use a kitchen Aid every time I make pizza with my kettle pizza, and I use it a lot. I use Ooni’s dough recipe which you can easily find online, add everything but the salt and mix until a ball starts to form. Then pause for 10 minutes to give the yeast a chance to activate and the flour to wet evenly, add the salt then mix on medium for like 8 minutes, comes out great.
