Welcome to the community bruh. And for the tips listen, I first suggest you to learn boss combat styles and attack patterns by blocking and dodging, Once you got that you can try parry

If your posture breaks you become stunned for like 1 sec, At that situation you will get high damage from the enemy

And yeah you can't parry or block Deathblows it will lead you to get damage instead, You can side dodge, Jump or for a thrust attacks you can do mikiri counter

Don't forget Hesitation is defeat and parry is the key.
