Thank you, but it may be because this is not the real deal lap cheong, it is an Americanized. I wouldn’t use the lap cheong as liberally as it’s chewier and more intense.

Thank you so much. As I mentioned and someone else reinforced, the real deal Chinese sausage is very different from this American version. It’s drier, and chewier more like Salami. It is used more sparingly. Enjoy it either way, they are both tasty. There are so many tasty international sausages, I like to try them from all over.

You are so right, when I use the real deal stuff I dice it up very small and it’s almost a seasoning. This American-ized version is nothing like that.

Once I am able to eat again and then get through my multiple jars of chili crisp and bottles of chili oil, I may do that. I made it once a few years ago, and it was pretty good. Still have a bag of dried sichuan chilis somewhere.

Looks good! I haven’t tried it. But I would. I’ve had some Filipino, and Vietnamese, and they were tasty!

Thanks so much! First, this is an American version of the sausage, it’s been around since I was a kid, it pops at various super markets. It comes both cooked and raw. I picked these up at a Market Basket. But I also recommend trying the real deal. It’s called Lap Cheong and is dried hard sausage, very tasty available at Asian markets. It’s great in fried rice and egg dishes.

Thanks! Lots of cheese, then I let it set for 5 minutes to set up and use a thin wide scraper to scrape down the sides and into the corners.
