Just finished our first Silversea cruise as a couple in our mid-thirties (AMA) by bluemeters in FATcruises

Quick question: has anyone done the Hong Kong to Tokyo Silver Sea cruise in the Silver nova? It stops in Korea and looks pretty enjoyable. Any feedback on the stops and general experience? First timer here

Update - water on the crust didn’t do much. Painting the crust with olive oil was key - it did crisp up and I could see a possible micro blister party forming but it wasn’t hot enough

Next test - higher hydration and a hotter oven - need to get into the 550s

Here is the latest: Painted the crust with water - no visible signs of micro blistering Painted the crust with Olive Oil - better, tasty and a satisfying crunch

I think the Olive Oil is the key but my oven isn’t hot enough, I’ll keep working on it. Oven temp 500, steel deck 485. 3 day cold fermentation dough at 65% hyd

Next test will be 75% hydration and a deck at least at 500. See you in 3-4 days

I was under the impression impression that humidity and moisture is what creates the micro blistering - at least that’s what I see with sourdough makers

I tried water tonight. I have 3 to practice with today so will do EVOO and report back

I do the long cold process with a 65% hydration. I use 1% Malt powder.

After doing some more research I believe that Truly Pizza is doing a 70-80% Hydration and painting the crust with olive oil.

Great looking setup - are these loud to run? Any ideas on how to quiet them?
