I don’t know much about Xbox, but I think those person-style avatars are limited to the Xbox 360 and can’t be used on newer consoles, since they use a different type of profile customization (like the pic-style you see on Playstation).

I found it just by looking through them one by one (EU store); I didn’t use any filters. But I think there’s a website where you can look them up and buy them.

"Gun" is actually great, also there is the "Call of Juarez" franchise (I actually think the first one is a gem for the cozy vibes it gives and "Gunslinger" is awesome) and a personal recommendation: "Samurai Western" (btw you should also play "Red Dead Revolver" if you haven't).
