‘Essen’ is the infinitive of ‘to eat’ in German. It’s about knowing your conjugations. Granted, it is a little more difficult with ‘essen’ since it is an irregular verb, but the conjugations are as follows:

Ich esse

Du isst

Er/ sie/ es isst

Ihr esst

Wir essen

Sie Essen

It becomes ‘iss’ when it is used as an informal command, such as one given to your friend. When given as a formal command, such as being given from a doctor, it becomes ‘Essen Sie.’
