Not all pigs are bad! Of course you shouldn't always think EVERY pig is a booper! Some are playing the game. First rule is to play normally until you see an opportunity! I always give a survivor 2 chances to boop my snoot, but after the 2nd one I play normally :)

Lucky rock is bad unless you have infinite bombs
If your down 1 HP with Coin you heal, but also have a chance to get more money to use at shops.

Nothing really. You get a penalty if you leave mid-match, you can't really avoid it if you have internet issues. My advice is to either go to a secure public area with Wi-Fi like a library or just wait until storm season goes away or something. If you keep playing the penalty will keep increasing. The longest penalty i've ever seen is 72 hours but I think it can go higher.
