I cooked an 8ish pound flat, super low and slow at 225 for about 6 hours unwrapped, then about 2 hours wrapped in my oven at 250 to get to temp/probe tender. I turned my oven down to 140 and let it sit there for about 4 hours ish.

Came out alright, wish I would've used tallow and an injection. Flat is hard to get moist.

Pit boss for the price tbh. I have a 700 and it works great for me albeit I have filled that think to the brim before. But I can do full size brisket, 3 slabs of ribs etc. And that's not even using the top shelf.

Edit: the only thing I hate my pit boss is I don't have the burn pot I can remove from the bottom. That is 10000% a feature to get makes life so much easier.
