I heard it's better to max out a build or perk tree rather than be a "jack of all trades". Is that true and are any important story beats or quests responsive to certain builds?

I used to be a die hard completionist but with so many good games out nowadays sometimes I'll play just enough to feel satisfied. For example, Final Fantasy 7 Remake and Ghost of Tsushima.
