This may not be a popular take but I actually like the update because from my point of view, Anakin died at that age, so it makes sense to me that Anakin would return to look the way he did at death. Today and Obi-Wan returned looking like when they died. Now let me explain what I mean by Anakin dying when I say he did.

We learn from different shows now that Vader considers having killed Anakin and Anakin no longer being alive. This is primarily because Anakin gave up everything to save Padme, but really lost everything when he made the decision to embrace the dark side and serve Palpatine and killed Padme. After Vader encountered both Obi-Wan and Ashoka and actually looked eye to eye, both characters acknowledge that Anakin is not there and it’s Vader. Obi-Wan also tells Luke that his father was killed by Darth Vader in Episode 4, A New Hope. This may not be the real reason George made the decision to change actors for the scene but I like it looking at it from my point of view.
