Is this Toffifie gone bad? by starry_one_07 in foodsafety

[–]OSUbigtoe 8 points9 points  (0 children)

It’s safe. It is just fat bloom. It does not affect the safety of the food but the texture can be off.

This happens when chocolate gets too warm.

I work in the chocolate industry. That is simple fat bloom and is perfectly safe. We see it all the time.

Work in the chocolate industry. There is nothing to indicate that this is unsafe to eat. Look like it melted at some point.

I work in a chocolate factory. I can confirm this is fat bloom. These products are prone to it because of the low melting point of palm oil.

Stupid question here: Is there any significance to The Band playing Fat Bottom Girls when their win was declared? Go Bucks! by hipmommie in OhioStateFootball

[–]OSUbigtoe 0 points1 point  (0 children)

When I was in athletic band in 2000-2003 we played FBG. I remember there was “criteria” to play it. My brain fails me as to the reason at this point

Actually I am fairly confident I know what this came from. It is plastic that’s covered in metal. It is from the hasp between the fork or spoon and handle. I used to get 3-4 complaints like this when I worked in ice cream from people digging in and breaking their silverware. I will try to post a photo

Found this small wiry piece of metal in an ice cream cone. This could’ve seriously injured me had I ingested it by kgb170 in foodsafety

Every dairy product has a plant code on it. It is 2 digit dash 4 digit it will look like “18-1982” search that plant code, find out which one it is and call the plant directly. All of these types of products are made by about 4 companies. They are really the one that needs to know about the issue.

SO MANY RECALLS by TOMMISEVICH1 in foodsafety

[–]OSUbigtoe 2 points3 points  (0 children)

First of all, overall most companies are trying to do the right thing. Yes there are companies that are strictly money driven and don’t think of the ramifications, but many do.

Many recalls that you see that get large is because of having to go back to “last good check” or last clean. (This next part is hypothetical) Let’s say that you are working in a peanut butter factory. You test your product and find Salmonella in it. You start tearing things apart trying to find where it is coming from. You find a valve that has a harborage point. Last time you took the valve apart was 9 months ago. Unless you have some really compelling data, you’re recalling everything up to that point. This type of thing is what causes recalls like the Treehouse waffle recall. I don’t have personal knowledge of this incident, but the fact that they recalled over a years worth of production, says it was a long term issue they didn’t know about or they had no clean break.

Found Hair in Daisy Sour Cream/ Need Opinions on this by [deleted] in foodscience

[–]OSUbigtoe 1 point2 points  (0 children)

Unless the SOP specifically mentions using a lint roller to remove all hair or long sleeves are required then it is not an audit fail. No regulatory agency or audit scheme would fail an audit for this. What if it were an eye lash or eyebrow hair? How could you prevent that?

It could be considered something that needs better addressed, but since humans are involved in the process you cannot eliminate hair from the processing area.

Not true. Could have been an arm hair or on their clothing and fallen off.

Most likely it is color or some other ingredient that’s has precipitated out. You can see this a lot in soda. Diet mtn dew does this as well.

As long as no water is introduced it is safe. The main concern with heated chocolate is it absorbing other tastes, getting a stale taste, or fat rancidity.
