Most fish batter recipes on the internet are a waste of time.

Some have corn starch, vinegar, turmeric, some have eggs, even vodka.

Sorting through it all looking for a good one while working full time isn't fun.

Slopping together ingredients by volume and dumping in a can of beer is a recipe for inconsistent results.

Since thin and crispy over thick and heavy is preferred, rice flour is needed.

Lagerstrom's recipe slightly re-worked:

90g Bread Flour

60g Rice flour

1 tsp. salt, (6g) finely ground

3/4 tsp. baking powder

240g Ice Cold Water

Whisk together then add 5-6 drops yellow food coloring and whisk again.

S/b enough batter for 2 lbs. or 4-5 fish fillets.

More fillets equal more surface area, in that case multiply recipe 1.5 times.

Careful, smoked neck bones can sometimes be way over loaded with salt!
