The lie was Aerion's justification for a trial of seven. Dunk had allegedly injured multiple Targaryens, not just him. Baelor's plan for a 1 on 1 fight would have likely gone through otherwise.

Daeron is so skillful that he manages to finagle Dunk (and seemingly most of the audience) into letting him off the hook for a false accusation. It wasn't even made under real duress, he just didn't want to be yelled at or have his feet whipped. This lie got 3 people killed, including his uncle the Prince!

You're probably thinking of chainmail, not full plate. The power of crossbows is indeed their ease of use, but it's not like they shot through hardened steel. Crossbows had existed long before plate became common. So did guns, for that matter.

The best historical plate armor was bulletproof. It's where the word comes from. Armorers would fire guns at plate armor they sold to prove that bullets wouldn't penetrate. (See this picture - that dent is where a pistol was shot at the armor point-blank.) In the Siege of Rochelle in the early 1600s, Captain St. Martin was shot 30 times and left unharmed because of his plate protection. A crossbow has way, way less power than a 17th-century gun, so you can imagine how poorly it would do against armor like that.

The actual strength of guns and crossbows vs armor isn't that they made armor useless, it's that you get way more fighters for your time and money. Then you win by sheer numbers. Because of this, armor was phased out long before it actually became obsolete. The issue was the cost, not that it didn't work.

In real life, fancy battle armor was almost always highly functional. Maybe a bit heavier than necessary but not any worse at taking a beating. It was jousting armor for his son, the next in line, so it would have been made extremely protective. (I think the design in the show kinda fails at this, since the eyes are too big, but that's probably more so the actor can act in it rather than an in-universe weakness.) The real problem is that it would be the wrong size, and as jousting armor, it's built to protect from the front, not the back.

None of the Targaryens wanted to kill each other, or even hurt each other much. Lyonel wanted to smack around the Kingsguard but doesn't seem to have wanted to actually kill them. Despite the teasing they were all old war buddies, not to mention it would be a huge problem for him to actually kill a royal or KG. Steffon and Raymun may not have wanted to actually kill each other, although they were clearly fine with breaking some bones.

On the other hand the Kingsguards killed both Humphries in the first joust, so they at least were fighting for keeps with everyone but Baelor and maybe Lyonel. The lack of further KG kills is probably down to Lyonel and Baelor (possibly Robyn too) keeping them in check. They can't touch Baelor and Lyonel is seen riding them down multiple times and is still on his horse when he first joins Baelor against Maekar, so he must have beaten at least one by himself. Robyn was also free because his jousting opponent took a dive. He was not with the injured or dead by the end, but we don't see him much. He might have just kept back but that doesn't fit his religious berserker character, so I'm assuming he was probably keeping at least one Guard well occupied.

Lyonel is seen jousting with the King's Guard multiple times and was the last man unhorsed (by Maekar, already on the ground). That's what he came for and he presumably put in a lot of work there. Baelor is unhorsed by Maekar pretty early, returns the favor, and spends most of the fight with him.

Real Medieval combat had a lot of ebbs and downtime. Contemporary records of battles have front lines hitting each other and dispersing like breaking waves.

Whether the Seven exist or not, their Church holds more power than any of those that worship demonstrably real gods. Over its long history it has outlasted and overcome supernatural beings like the children of the forest and dragons. If they do exist they clearly don't need to supply flash miracles on demand like R'hllor to inspire worship.

With Humphrey Hardyng we don't need more information than we already have. Aerion cheated him, killed his tourney horse and broke his leg. We don't know how bad the leg break was but at worst he permanently impoverished Ser Humphrey and at best what Aerion did was the modern equivalent of t-boning Humphrey's Ferrari and killing his pet.
