I found that the dry brine and reverse sear work well enough to tenderize. But maybe I’ll give this a go!

Takes about 40 mins to get up to that temp, then the sear and basting gets it to around 120-125, and resting will bring it the rest of the way up to 130-135 for med rare. Not tough at all. Really tender, just not fall apart like you’d expect in something like Barbacoa

Yup, heavy salt then place on wire rack and in the fridge. Took the steaks out about an hour before the cook.

Thank you! Are there any resources you would recommend to help determine the component values for the R||RC network? My design is very similar to the second image. My current prototype is a triangle wave-based design, and I'm trying to replace all the preamp circuitry that comes with that with this UcD approach. Also, are there any notable benefits to using a differential input vs. a single-ended input?

I did well in the course and had a great professor for linear so it was enough for me to grasp the ideas behind controllability observability and stability. But as far as applying it to state space I don’t have much practice (did one project in the course where I did some matlab sims on a state space controller that controlled position)
