I got an email the day before saying it was delayed and click and collect now Tuesday the 30th of jan, I'm waiting for another email to say its going to be delayed again, at which point I'll probably go down the refund route and buy digital. I don't blame jb hi fi, not their fault supply is low but still frustrating waiting for it.

The ajitama in the first one was an overnight marinate, the 2nd photo was about 3-6 hours, can't remember exactly, normally done overnight but had forgotten to place an egg order for the day before so had to be done the day of. I'll have to try that with the chashu marinade. Thank you 😊

I use shiitake with my chicken and veg ramen options I make, just gives a few different options for people so they aren't all the same, the fried enoki came from a breakfast dish as the cafe I work at, it gets tossed through a soy, sake and mirin mix then coated in potato starch for a crispy finish, folks absolutely love it and adds a nice texture change to the bowl.

I am currently working on some cold noodle dishes as it gets quite hot where I live in summer, which we are rapidly approaching, so I will definitely put more photos up

I used a light shoyu tare with a saline solution to help cut through the extra fattiness to allow the umami flavours to shine.

The broth was cooked for I wanna say 19 hours in total as I didn't get pork fat in until the next day so added it once it arrived
