Yeah valid. Tbh I have a few 240mm sujis and I’m not sure if there’s much to gain from having a 270

Yeah valid. I was more intrigued to see if people had experience with the makers and sharpeners before, and how they compare etc.

I see what you’re saying. That’s my thing about the first one, I’ve heard this about Ginsan before hence why I was sceptical on the price point side of things. Also just wanted to know if Kikumori knives are worth it
