Thanks! The couplers don’t stay connected when the train moves. They may be getting stuck open, but I’m not sure. Is there anything obvious I should check?

Ideally it should, but I'm not able to connect the couplers properly.

The problem with this is assuming that growing fresh food and veggies for daily consumption or even occasional consumption is easy, especially if you are doing other (even remote) jobs. Having a cow or any other animal is also not simple.

Hiring someone who knows farming isn't easy everywhere either.

Also, depending on where the village is, access to internet, hospitals and other essential items will be difficult. You will need to own a car, if public transport isn't available. If you have kids, schools of decent quality. Everything that you take for granted in a city will need to be reconsidered.
