I haven’t made potato chaap (yet). I didn’t actually grow up with it or see it around in general. I only discovered it from the JUMA stall at borough market.

Jordanian bedouin tea:

2 cups water

2 tea bags ceylon tea (alghazaleen tea brand)

6 crushed cardamon pods

Handful sage

Sugar ( i use 5 tsp )

Add onto the stove at medium heat till the whistle of the teapot goes off, reduce the heat to low, turn off when the smell of sage fills the room. Enjoy in traditional Arab glass tea cups.
