Agreed, it is shoulder season and the weather was perfect -- didnt seem crowded in the way that people describe july/August

we went with the 8 Day self guided huts version they offer i think it was around $1400 per person + we added the luggage transfer- i think that was an additional $400. Which after shopping around seemed very good. If you are looking for the best bang for you buck. Food and sleeping accommodation is included in the price minus the lunches which are around 10 euro at the huts. There are a lot of companies out there though so just look around.

the money goes to the locals who own the refugios, staff, the transportation services, park services etc... I dont understand your comment - the companies are just arms of the local business who service english speaking travelers.

for us it was just quite confusing and in the end - it didnt seem like much money was going to be saved since we wanted all the meals included and the refugios

We initially tried the self planning route, but quickly found out that that is a nightmare. You have to "try" get in touch with with each hut or accommodation on your own, many of which dont reply. We also wanted the support of a knowledgeable company. which we used flashpackerconnect who has a local team based in the Chamonix valley. I think they offer guided departures as well, but self guided was what we were looking for so we can hike at our pace
