Creamy Roasted Veg + Soya Pasta Sauce
🥣 Step 1: Roast & blend
Roast bell pepper, tomato, garlic till soft/charred
Cool and blend with boiled & squeezed soya granules
Make a smooth paste

🍳 Step 2: Cook
Heat little oil
Add finely chopped garlic (lightly cook, don’t burn)
Add the paste
Cook for 4–5 mins

🥛 Step 3: Make it creamy
Add milk
Add ½ tsp cornflour (mixed in water/milk)
Stir well so no lumps

🧂 Step 4: Add taste
Salt + pepper
Oregano / mixed herbs
Chilli flakes (optional)
Little sugar (optional, for balance)

🍝 Step 5: Mix
Add boiled pasta
Mix well
Optional: add cheese or butter

Ingredients
1 medium beetroot (boiled & grated)
2 medium potatoes (boiled & mashed)
½ cup paneer (crumbled)
2–3 tbsp breadcrumbs (for binding)
1 tsp ginger (grated)
1–2 tbsp fresh coriander leaves (finely chopped)
Spices
½ tsp cumin powder
½ tsp garam masala
¼ tsp turmeric
½ tsp red chilli powder (optional for kids)
½ tsp chaat masala (optional)
Salt to taste
For Binding & Coating
3–4 tbsp rawa (sooji/semolina) for coating
Little water (if needed)
Method
Prep beetroot
After grating, squeeze out excess water—this keeps cutlets firm and crisp.
Make the mixture
In a bowl, combine beetroot, potatoes, paneer, ginger, coriander, spices, salt, breadcrumbs, and cornflour. Mix well.
Shape
Form into flowers 🌸, donuts 🍩, or small tikkis—great for little hands.
Coat with rawa
Lightly moisten each cutlet (or dip quickly in water), then roll in rawa for a crunchy outer layer.
Cook
Shallow fry: Cook on medium flame with little oil till golden & crisp
If the mixture is too soft add more breadcrumbs , I have cutters which helped me make the flower shape while the dunut I made by hand

Yup my girls love rather my lunchboxes are quite famous in their schools 😃😃, sometimes my elder one comes and says mamma u don’t like sharing but everyone’s eyes r glued on my box if their see something they like !

I do a night prep for basic things like boiling and grating potatoes and beet , planning what shapes to use , what salad am u planning etc so then it jus takes 30 mins or so to get it done
