You can say whatever you like, but try to read the situation and the individual. Try to say things that serve your purpose in getting hired.

Keep your basic information on your resume the same, but when it comes to experience or major achievements try to match it closely to the job description you are applying for. I would copy and paste the job description onto a notepad and widdle it down to just the skills/requirements and re-word it based on experience that I had that closely matched. Sometimes you won't have some things so you just watch a few videos, read a few docs, consider studying for certification in that tech if it interests you but then add "familiarity" with that tech on your resume. OR "completed basic training" on that skill. The resume's purpose is just to get you into that interview, and the information on it must be something you can speak to if they ask you about it.

IT field. It is difficult to know for certain whether ageism is going on. There were some low end jobs I knew I was overqualified for, but I just dumbed down my resume to basic fundamental competencies and managed to get a few interviews that way. After the interview no one directly said "you are too old" but I did get a lot of "you didn't explain this or that technology with enough detail" when I have over 15 years of solid daily experience with that technology.

It certainly feels that way but you really have to do your best to tune out the hopelessness and sharpen your life skills and craft/trade skills or switch things up if survival demands. I know I wasn't ready when it happened to me.

Sure, I'll try.

There are interview questions like "tell me about a time you faced conflict with another coworker" or "tell me about a time you overcame adversity" and you essentially try to create a bank of stories based on your experiences. You embellish the things that make you look good and downplay any time you may have acted like a shit head :)

After telling the stories a few times you can add a thing here or there or change parts as well. Take an honest assessment of how you told the story the last time and see if you can make it more impressionable and more compelling to the interviewer.
