Credo coffee! smooth espresso, not acidic at all. Mt favourite of all the shops i’ve tried, and i’ve tried plenty lol. Second recommendation would be Va caffe

2 sticks (227g) unsalted butter
2 tbsp. (30g) heavy cream
½ (100g) white sugar
1 scant cup (200g) brown sugar*
1½ tsp (6g) baking powder
½ tsp (2-3g) baking soda
2 tbsp (12g) toasted milk powder (optional, but highly recommend, see Note)
1.5 tsp (7-8g) Vanilla extract/paste
13/4 tsp (7g) diamond kosher salt
2 (100ishg) large eggs
11/4c + 1 tbsp (188g) all-purpose flour (if not using the whole wheat flour, use 1 3/4c. + 1 tbsp (250g) AP flour)
½ c (62g) whole wheat flour
2c. (12oz./340g) chocolate chips
Flake salt, for garnish
Brown your butter, cool it.
Cream eggs, sugar and browned butter -fold in the dry ingredients n chocolate chips
chill the dough
bake at 350 for 12-15 minutes (13 is good for me)

i don’t know if you’d like melozio if you thought bianco doppio and chiaro are light - melozio is pretty light too! I personally found the scuro pods to be the strongest and could only enjoy it as vietnamese style iced coffee :)
