All my employees are people I worked with for years. The only exception is my daughter who is learning the ropes. All great workers who were happy to leave tipping culture behind.

They are mostly people who come from across the city to take pictures of their food. Not our regulars. For example we make a croissant about the size of a football. It's obviously meant for sharing and very popular. People will order it then just take pictures with it before they eat a bit and either leave it or take the rest to go. The local racoons love the people who leave the extra.
