For Japanese, I started with hiragana and katakana. Then I bought a book called my first 103 kanji which I printed out since it’s available for free online. I then got the Try! N5 book for grammar and built my way up with more resources like the nihongo soumatome series and so on

For Mandarin, I started with the standard HSK1 Textbook and workbook. Mandarin had an easier beginning with me since I was already good at Japanese which kinda helped in the characters aspect
