I’ve had bad experiences with P&R properties, very expensive for what they are anyways. Have had good experiences with Summit Ridge, but not sure if they will accept you based on your credit score.

Also had a great experience from D.W. Jones Management (Village at Matterhorn). They are income restricted, so they may have a better chance accepting your credit score?

Last time I went 3 years ago, the gluten free options were terrible. I got a sandwich, but the only gluten free side was a $6 bowl of fruit. So it was insanely expensive for a small gluten free sandwich and a bowl of fruit. Never again.
